Thumbprint Cookies

Thumbprint Sugar Cookies with Raspberry Filling

Basic Sugar Cookie with Thumbprint

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup (1 stick) butter, room temp
1 egg
1 tsp vanilla

1. Combine flour, baking powder & salt in a small bowl
2. With a mixer on medium speed, beat sugar, butter, egg and vanilla
in a large bowl for 2 mins, until smooth and creamy.
Using a wooden spoon, stir in flour mixture. Shape into a
15 inch log; wrap with plastic wrap, refrigerate at least 2 hrs and up
to 3 days. Heat oven to 350ยบ. Cut log in 1/2 inch thick slices.
Roll each slice into a ball and place on ungreased baking sheets,
spacing about 2 inches apart. Indent center of ball by pressing
with your thumb. Spoon about 1/2 tsp any flavor jam into each
indentation. Bake 12-14 min's or until lightly golden around edges!
