Pampered Chef Mini Blueberry Muffins
1/2 cup butter or margarine
1 1/4 cups sugar
2 eggs
1 cup sour cream or plain yogurt
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups flour
2 cups blueberries, fresh or frozen
Preheat oven to 375 degrees. Cream butter and sugar together.
Add eggs and beat until smooth. Mix in sour cream and vanilla.
Combine dry ingredients and stir into creamed mixture. Fold in
blueberries. Spoon into Mini-Muffin Pan that has been lined or
sprayed, filling half full. Bake for 18-20 minutes.
(For Giant Muffins, bake for 35-40 minutes at 400 degrees)
YIELD: 72 mini muffins or 6-7 giant muffins
