Blueberry Breakfast Scones

I made these delicious scones on Sunday morning and like to make them often. So good with a cup of coffee and a magazine!




Need:
2 cups all-purpose flour
1/4 cup sugar
1 tblsp baking powder
1 tsp salt
1/4 tsp baking soda
1/4 cup margarine or butter
1/2 cup buttermilk (1 1/2 tsp vinegar or lemon juice & 1/2 c. milk - let stand 5 min's)
1 egg
1 tsp vanilla
1 cup frozen or fresh blueberries

Set oven to 400. Lightly grease a baking sheet and set aside. In a large bowl stir together flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Make a well in center of flour mixture. Stir together buttermilk, egg and vanilla; add to flour mixture all at once. Stir with a fork just until moistened. Gently stir in blueberries.

Scoop 3 tblsp balls of dough onto baking sheet. Makes 10. Bake for 15-20 minutes or until golden. Remove from baking sheet, let cool on a wire rack. Serve warm. ENJOY! :)
